Material that survives a real shift.

Restaurant Bookshelf is the operations library for restaurants, run by POSADA R&D LLC. Everything we publish is free, bilingual, and written for the person on the shift — not for the person who reads manuals.

We do not publish anything that would not hold up on a Friday night. Every piece of material is designed against four criteria and measured by four outcomes — the REAL → VIVA framework, applied to a kitchen.

What the library covers

  • Food safety and health inspection compliance
  • Kitchen processes and standards
  • Cost control, inventory and waste
  • Staff training and shift handover
  • Operational logs and record-keeping
  • Equipment, maintenance and emergencies
  • Menu and service design
  • Free, bilingual material with an AI tutor

How we work: from REAL to VIVA

REAL defines how a piece of material is built; VIVA defines what it must produce once it reaches the kitchen. It is the framework POSADA R&D LLC uses across every industry — here it is pointed at one.

REAL · criteria

Criterion Spanish What it means
R Relevant Relevante Solves a problem the kitchen has today
E Explicit Específica Says exactly what to do
A Auditable Auditable Leaves evidence an inspector accepts
L Limited Limitada Fits the shift you actually have
  • Relevant. It answers a problem the kitchen actually has this week, not one that looks good in a manual.
  • Explicit. It says exactly what to do: which temperature, which order, who signs it.
  • Auditable. It leaves evidence. If an inspector asks, there is a log that proves it.
  • Limited. It fits a real shift: the staff, the equipment and the time you actually have.

VIVA · outcomes

Outcome Spanish Dimension
V Value Valor Money that stays in the business
I Increase Incremento More covers, same standard
V Viability Viabilidad Still done six months later
A Accountability Actuación responsable Nobody gets sick
  • Value. Less waste, fewer fines, fewer repeated mistakes. Money that stays in the business.
  • Increase. A kitchen that can take more covers without the standard slipping.
  • Viability. A practice the team still follows in six months, not one that dies after the training session.
  • Accountability. Nobody gets sick. Not the customer, not the person on the shift.
Working principle

If a piece of material does not pass REAL, we do not publish it. If it does not produce VIVA in a real kitchen, we rewrite it.
