Light is the cheapest thing in this course to fix and the one that changes a room fastest. It costs bulbs and a dimmer, it takes an afternoon, and it is the difference between a place that looks like somewhere you would stay for a second glass and one that looks like a canteen with candles on the tables. It is also the easiest to measure: the free light meter on your phone gives you a number in seconds, and that number usually explains a complaint you have been hearing for years.
💡 How much light, and when
The mistake is almost never the fitting. It is that the room is lit identically at every hour of the day, because there is one switch and nobody thought about it. Lunch and dinner are two different businesses and they need two different rooms.

Take the phone to three tables at two in the afternoon and to the same three at nine at night. If the readings are the same, you have found something worth an afternoon. The fix is dimmers on the main circuits and a written scene for each moment — lunch, dinner, late, cleaning — with the times on the opening checklist, exactly like the switch-on times in the kitchen course. It is the same idea: a decision made once, written down, instead of one made nightly by whoever is nearest the switch.
Two practical notes. Menus have to stay readable at your dinner level, and older eyes need noticeably more light than young ones — a room tuned for a twenty-five-year-old designer is a room where half your guests use their phone as a torch. And any light aimed at a seated person's eyes is worse than no light at all.
🌡️ Colour, and why food looks grey
Two properties of a bulb decide how your food looks, and both are printed on the box.
Colour temperature, in kelvin. Below 3,000 K is warm and yellow-ish; above 4,000 K is white and clinical. Dining rooms at night want 2,400–3,000 K, which flatters both the food and the people. Anything above 4,000 K in a dining room at night makes it read as a pharmacy, no matter what is on the walls — and it is the single most common lighting error, because those bulbs are cheaper and brighter and somebody bought them for exactly that reason.
Colour rendering, the CRI number. It says how honestly the light shows colour, and cheap LEDs are often poor at it. Under a low-CRI bulb, a rare steak looks grey, a tomato looks orange and a green salad looks tired. Nothing is wrong with the food. You are photographing it with a bad camera. Buy 90 CRI or better for anything that shines on a plate; the difference in price is small and the difference on the table is not.
Mixing is where rooms go wrong quietly. Two bulbs of different temperatures in the same sightline make a room feel unplanned even when nobody can say why, and it happens naturally over years as bulbs get replaced one at a time with whatever was in the van. Write down the model, temperature and CRI you use, put the note in the same place as the closing checklist, and re-lamp in complete zones rather than one at a time.
🎯 Where the light lands
Level and colour decided, the last question is direction, and it is the one that separates a professional-looking room from an amateur one.
- Every table gets its own pool of light. A pendant, a spot, a lamp — something that makes the table brighter than the aisle beside it. This one change does more than any other in this topic: it makes the plate the brightest thing in the guest's field of view, which is exactly where you want their attention.
- Faces need light from the side or the front, not only from directly above. Overhead-only lighting produces shadowed eyes and tired-looking people, and people who look tired feel tired.
- Nothing shines into anybody's eyes. Sit in every seat once, look up, and move or shade any fitting that glares. This is the ten-minute exercise from topic 1, done with a purpose.
- Wash the walls, not the floor. Light on vertical surfaces makes a room feel bigger and warmer; light on the floor makes it feel like a corridor.
- Give the entrance and the bar their own treatment. The door is where the guest decides what kind of place this is, and the bar is the one place where brighter and more theatrical usually works.
- Candles and small table lamps are the cheapest upgrade in the industry, and they solve the "not enough light on the table" problem without touching the electrics at all.
And one thing not to do: do not fix a light problem by adding more light everywhere. Rooms that feel bad at night are almost never underlit overall — they are evenly lit, which is the same thing as having no lighting design. Contrast is what makes a room look designed, and contrast is free.
☀️ Daylight, windows and the photographs
If you have daylight, it is your best asset and it is also the reason your lunch and dinner readings differ so much. Windows change the room by the hour and by the season, so a lunchtime scene that works in June may be dim in December; check the readings twice a year rather than assuming.
Glare is the flip side. A low winter sun into the face of table 6 makes that table unsellable at exactly one hour of the day, and blinds or a sheer curtain fix it for the price of an afternoon. This kind of thing is invisible from the pass and obvious from the chair, which is why the ten-minute sit is worth repeating at different hours.
Finally, the photographs. Your room will be photographed by guests at night, in your dinner light, on phones — and low, warm, high-CRI light on the table is exactly what makes those photos look good. Rooms lit at 4,000 K from above photograph badly, guests post fewer pictures and the ones they post do you no favours.
