The last category is the one that never appears on any list because each item is trivial: a pair of gloves, a paper towel, a cleaning cloth, a spray bottle, a straw, a stirrer. Individually none of them is worth a meeting. Collected into a box over a single service, they are a surprise — and unlike energy, this is the part of the building where the whole team can see the result the same day.
📦 The one-day audit
Put an empty box in the kitchen and another behind the bar, and for one full service put into them everything that gets used once and thrown away. Not food waste — that is the waste course — just objects: gloves, towels, wipes, film, foil, cups, stirrers, sachets, bags, tubs, straws.
Then show the box to the team at the end of the shift and ask one question: which of these did we actually need? That conversation, held in front of a physical pile from one ordinary night, does more than any policy document — and it usually produces three or four changes on the spot, from the people who use the objects rather than from whoever writes the rules.
The example restaurant does around thirteen takeaway orders on a normal day, so the box will hold that packaging plus the day's operational disposables. Do it once a quarter, on a comparable day, and it becomes a measurement rather than an anecdote.
🧤 The usual suspects
Some categories come up in every kitchen, and each has a version that keeps the hygiene and loses the object.
- Gloves. Frequently used where a washed hand is both safer and cheaper, and changed far less often than the rules actually require, which is the worst combination. The food safety course is the authority on when they are required; what belongs here is that "gloves on all day" is not a food safety practice, it is a habit that generates a bin liner a shift.
- Paper towel. The single largest disposable in most kitchens. Colour-coded microfibre cloths, laundered, do most of the work — and where paper is genuinely needed, a dispenser that gives one sheet at a time halves the consumption without anybody noticing.
- Film and foil. Reusable lids and sized containers replace most of it, and they are faster in service, which is why kitchens that switch rarely go back.
- Bar disposables. Straws on request, no stirrers where a spoon exists, and cups only for the door.
- Cleaning chemicals. The next section, because this is where the money and the mess both are.
None of these is a sacrifice, and it is worth saying that clearly to the team: the aim is not to make anybody's job harder. Any change here that makes a busy Friday worse will be abandoned within a fortnight, exactly as the kitchen course found with every other change — and rightly so.
🧪 Chemicals: it is mostly water and dosing
Cleaning products are two problems wearing one coat. The first is that ready-to-use bottles are mostly water, shipped and stored and thrown away in plastic; concentrate plus a dosing dispenser removes almost all of that packaging and most of the transport. The second is that without dosing, staff pour by eye, which means using two or three times what the product needs — a cleaner used at triple strength does not clean better, it just leaves residue and costs three times as much.
So the fix is one piece of equipment and one habit: a dosing dispenser on the wall and labelled bottles that get refilled, rather than a shelf of half-used sprays. It reduces packaging, chemical use and cost at the same time, and it makes the result consistent, which is the only thing a health inspector will care about.
Two more that matter and are easy to get wrong. Never mix products, which is a safety rule long before it is an environmental one. And keep the sanitiser concentration where the food safety course says it should be — this is the one place in this entire course where "use less" is the wrong instruction, because a sanitiser below strength is not a saving, it is a failed control point.
🚰 What goes down the drain
The last item is the one nobody thinks of as consumption at all. Grease down a drain becomes somebody's blockage and eventually your emergency call-out; a grease trap that is serviced on a schedule is both an environmental measure and the cheapest insurance in the building.
The same goes for what gets poured away in cleaning: chemicals at the right dilution, no solvents down a sink, and the oil from the fryer collected rather than drained. Used cooking oil is worth something — collectors take it free or pay for it — and the kitchen course already wanted it filtered daily for its own reasons, so the two practices reinforce each other.
Write the servicing dates on the same calendar as the coil cleaning from topic 2 and the deep cleans the room course scheduled. Everything in this course that lasts ends up on somebody's checklist, which is what the final topic is about.
