This is the topic the printed handbook behind this course did not really have. Across its twelve chapters allergens appear once, in a list, and the rest of the material is about bacteria. That gap is not unusual and it is not harmless: everything in the previous topic — the washing, the sanitising, the temperatures — is aimed at organisms, and none of it touches the hazard in this one.
⚠️ A different kind of hazard
Heat kills bacteria. Cooking is, among other things, a safety step. That single fact organises the whole of the rest of this course, and it is exactly what does not apply here.
An allergen is a protein, and cooking does not destroy it. Neither does freezing, neither does time, and neither does the amount of sanitiser in the bucket. A trace of peanut cooked at any temperature for any length of time is still a trace of peanut. There is no kill step, so there is no recovery: the only control available is keeping it out in the first place.
That is also why the vocabulary is different, and the difference is worth keeping straight:
- Cross-contamination is organisms moving from one food to another. It is the subject of the last three topics, and cooking and sanitising are the answers to it.
- Cross-contact is an allergen moving from one food to another. It is the subject of this one, and the only answers are separation and cleaning — cleaning in the plain sense of physically removing the residue, not sanitising.
The scale is different too. Bacterial risk is mostly about quantity and time; a small number of organisms on a surface is a normal situation. For somebody with a severe allergy, an amount you cannot see is enough.
🔍 Where it actually happens
Cross-contact does not usually happen where people look for it. It is rarely the obvious thing — the wrong ingredient going in — and almost always one of a small set of quiet routes that a small kitchen uses constantly because they are efficient.
- The fryer. One oil, everything in it. Anything breaded has put wheat into that oil, and the chips that come out of it afterwards are no longer a gluten-free dish, however carefully the plate was assembled.
- Shared utensils and boards, particularly tongs on the line, which move between dishes faster than anything else in the building.
- Bulk containers and scoops. A scoop that lives in the flour and gets used in the sugar. A hand in the nut bin and then in the garnish tray.
- Splash and airborne flour during prep, which lands on whatever is uncovered next to it.
- The cloth from the last topic, wiping a bench that had bread on it and then a bench where the allergen-free plate is assembled.
- Toppings and garnish added at the last second, after the careful part is over — the crouton, the sauce, the dusting, the shared butter.
Read that list again and notice what it has in common: none of these are mistakes about ingredients. Every one is a shortcut that works fine for every other purpose in the kitchen, which is why knowing the ingredients of a dish is not the same as being able to serve it safely.
🍽 What happens when a table declares one
The sequence has to work on a Friday, with the staff you actually have, and it is short enough to teach in one briefing.
- Front of house takes it seriously and never guesses. The two acceptable answers are what the dish card says and "let me check that for you". Never "I think it should be fine".
- The kitchen is told before the order goes in, marked in whatever way survives the pass, and told clearly enough that it is not lost in the noise.
- The dish is made in a clean space with clean equipment, ideally first rather than squeezed into the middle of a run, and never assembled next to the thing being avoided.
- It is carried and served separately, and whoever puts it down knows which plate it is. More than one careful kitchen has been undone at the last metre.
- If it cannot be done safely, say so. Declining a dish is a completely acceptable outcome, and it is infinitely better than a plate served with fingers crossed.
That last point is the one that needs saying to staff explicitly, because the instinct in hospitality is to find a way to say yes. In this one area the culture has to be different, and it has to come from the top or it will not hold on a busy night.
📇 The paperwork, which belongs to the other course
The dish card — one per dish, every component down through the sub-recipes, the declarable allergens, and the date it was last verified — is set out in the compliance course, along with the triggers that keep it current: a new product, a substitution, a recipe change, a fixed review date.
What belongs here is the reason those triggers exist. A card goes wrong when a supplier sends a substitute at nine in the morning and the kitchen accepts it under pressure, because the specification of that substitute is not the specification you wrote the card from. The paperwork course tells you who owns the card; this one tells you that the delivery door is where it silently stops being true.
Which is also why the topic sits between cleaning and cooking rather than at the end: the allergen decisions are made during prep and service, not during the review.
