Cooking is the step everybody thinks of as the safety step, and it is — but it is also the one most restaurants already do reasonably well, because a thermometer settles the argument. What goes wrong sits on either side of it: the thawing before, and above all the cooling after. Getting food from hot to cold is the most dangerous hour in a kitchen and the one nobody watches.

Internal temperature is the only thing that counts. Not colour, not time, not how it looks when it is cut — colour in particular is unreliable in both directions, and a burger can be brown through and undercooked or pink and perfectly safe.

The thermometer goes into the thickest part, away from bone and away from the pan, and it needs a moment to settle. And it needs to be right, which is the step almost everybody skips: a thermometer that has never been calibrated is a thermometer telling you a story. Check it in ice water, check it against boiling, do it regularly and after it has been dropped, which is the usual reason it starts lying.
Between cooking and serving, hot food is held hot and cold food is held cold. Holding equipment holds — it does not bring anything up to temperature, and using a hot cabinet to finish something is one of the more common ways to keep food in exactly the range it should be passing through.
❄️ Cooling: the dangerous hour
Here is the step that causes more trouble than cooking ever does, and it is invisible because it happens after service when everybody is tired and the pot is going in the fridge anyway.
A large pot of anything cools from the outside in, and it does it far more slowly than intuition suggests. The middle of a full stockpot can stay warm for hours in a fridge — warm enough to be a good place to be a bacterium, for long enough to matter. And the fridge, meanwhile, is fighting a heat source it was never designed to absorb, which puts everything else in there at risk too.
So cooling is something you do actively, not something that happens:
- Divide it. Shallow containers, smaller volumes. This single change does more than everything else on this list combined, because it is a surface area problem.
- Help it along — an ice bath, an ice paddle, stirring, or spreading out on trays. Anything that moves heat out faster than still air in a cold box.
- Never put a large hot pot straight into the fridge, and never seal a lid on something that is still warm.
- Measure it rather than assume it. The number that tells you whether your cooling works is the one taken in the middle of the biggest container an hour or two in, and almost nobody has ever taken it.
Your food code will specify the stages and the times cooling has to meet. Find them, write them next to the fridge, and then check yours against them once with a thermometer — that comparison is the most useful ten minutes in this whole course.
🧊 Thawing, reheating and leftovers
The same logic runs backwards through the other two operations, and both have one common failure that is worth naming.
Thawing happens in the fridge, planned a day ahead, or under cold running water, or in the microwave if it goes straight to cooking. What it does not happen on is the bench: the outside of that piece of meat reaches room temperature hours before the middle thaws, and it spends all of those hours somewhere warm.
Reheating is not warming up. It goes to the reheating temperature the table gives for leftovers, all the way through, in one go — and holding equipment cannot do it, for the same reason it cannot cook. Something reheated once and cooled again is at the end of its life; the reheat is a single-use step, not a cycle you can repeat.
Leftovers get labelled with what they are and when they were made, and get used within the window your code sets. Anything unlabelled is not a leftover — it is an unknown, and the only safe thing to do with an unknown is throw it away, which is much cheaper than the alternative and far cheaper than the argument about whose it was.
🔧 The equipment that has to be right
All of the above assumes equipment that does what it claims. The fridge that reads four degrees and runs warmer, the hot cabinet that never quite gets there, the fryer whose thermostat drifted a year ago — each one turns a correct procedure into an incorrect outcome, silently, and no amount of care by the cook compensates.
Colour coding of boards belongs here too, for exactly the reason it belonged in the cleaning topic: it removes the need for anybody to remember.

And the maintenance record below is what turns "the fridge has been struggling" from a thing people say into a thing with dates on it. It is also the log most likely to justify replacing a piece of equipment, because three call-outs written down argue better than an opinion.
