Ask anybody in a kitchen whether the surfaces are clean and the answer is yes. Ask whether they are sanitised and the answer is usually the same yes, which is the problem this topic exists to fix: they are two different operations, they happen in a fixed order, and doing the first one brilliantly does not achieve the second one at all.
🧽 Two steps, and they are not the same step
Cleaning removes what you can see — grease, food debris, dirt. It is done with detergent and physical effort, and when it is finished the surface looks clean because it is clean, in the ordinary sense of the word.
Sanitising reduces what you cannot see, on a surface that is already clean. It is done with a chemical at a specific concentration, or with heat, and it changes nothing about the appearance of anything.
The order is not negotiable and the reason is chemical rather than procedural: sanitiser applied to a dirty surface is neutralised by the dirt. Organic material binds it up before it reaches anything living. Spraying sanitiser onto a greasy board does not sanitise it, does not clean it, and leaves behind a board that somebody now believes is safe.
Which gives the sequence that every wash routine in the building is a version of: scrape, wash with detergent, rinse, sanitise, and let it air dry. That last step is not decoration — drying a sanitised surface with a cloth undoes it, and the cloth is usually the dirtiest object in the room.
⚗️ Concentration, and why more is not better
A sanitiser has a working range. Below it, it does not do the job; above it, it stops being safe to have near food and can leave residues, and with some products it actually works less well. It is one of the few places in a kitchen where "a good glug" is a genuinely bad instrument.

Three practical consequences follow, and they are what separate a kitchen that sanitises from one that believes it does.
- Test strips are the only way to know. They cost almost nothing, they take five seconds, and without them the concentration is a story somebody tells. A bucket mixed by eye in a hurry is as likely to be double as half.
- Solution degrades. A bucket mixed at the start of service is weaker by the middle of it, faster if things have been dunked in it. It gets remade during the shift, not at the start of the day.
- Water temperature and contact time matter. The surface stays wet for the time the product says. Wiping it off immediately is the most common way to do everything right and achieve nothing.
🎨 Colour coding and the cloth problem
Colour coding exists because it removes the need to remember. A red bucket is for one thing whether or not anybody was trained this week, and the system survives a new starter in a way a written rule does not.
The handbook this course inherits its numbers from codes the chemicals themselves:

And there is a second layer of the same idea for cloths and buckets, which are the two objects most likely to move contamination around a kitchen. A cloth that lives in a sanitiser bucket and stays there between uses is doing its job; a cloth folded on the pass, used for everything, drying slowly, is an incubator being wiped across surfaces. The distinction is worth more than most of the equipment in the room.
Whatever scheme you use, the important thing is that it is written on a wall and not held in one person's head — which is where the cleaning log comes in.
📋 The schedule, and the trap under the sink
Daily tasks look after themselves because they are visible. What needs a schedule is everything on a weekly or monthly cycle: behind and under equipment, extraction, shelving, seals and gaskets, the ice machine, drains. These are also, not coincidentally, the things an inspector heads for.

The grease trap gets its own record and its own paragraph, because it is the item most likely to be entirely forgotten until it announces itself. It has a service interval, that interval depends on your volume rather than on the calendar, and the consequences of missing it are a blocked line during service and, in many jurisdictions, a discharge problem that is somebody else's business as well as yours.
