🌡️ Proper Storage Temperatures
Keeping perishables at the right temperature is what holds bacterial growth back. Refrigerator: 32 °F to 40 °F (0 °C to 4 °C). Freezer: 0 °F or below (−18 °C or below). Monitor and log temperatures regularly: the log is what demonstrates compliance.

🥩 Separation of Raw and Cooked Foods
Prevent cross-contamination by giving raw and cooked foods their own space:
- Use separate shelves or containers in your refrigerator.
- Ensure raw meat, poultry, seafood, and eggs are well-separated from other foods.
🔄 FIFO (First-In, First-Out) System
- Label all food items with their receipt or preparation date.
- Always use older stock before diving into the newer stock.
🍲 Cooling and Storing Cooked Food Safely
Cooling procedure:
- Divide large quantities of food into smaller, shallow containers to speed up cooling.
- Use a food thermometer to ensure temperatures drop to 70 °F within the first 2 hours and to 41 °F or lower within an additional 4 hours.
- Utilize cooling equipment like blast chillers or ice baths to expedite cooling if necessary.
- Stir soups, sauces, and gravies periodically to ensure even cooling.
- Never cover or store hot foods in the refrigerator: it raises the internal temperature and slows cooling.
Storing procedure:
- Once cooled to 41 °F or lower, cover containers with tight-fitting lids or plastic wrap.
- Label containers with the date and time of storage.
- Place containers without overcrowding, to allow for proper airflow.
- Store raw meats and poultry on the lowest shelves.
- Regularly check that refrigerator and freezer are at the correct temperatures (40 °F or below and 0 °F or below).
🏷️ Labeling and Dating
- Label all food items clearly.
- Date them to ensure they are used within their safe shelf life.
